Where the wild yeast actually lives

The video mentions that yeast is already in flour and on your hands, which is true, yet the picture is more specific. Flour carries a small resident population of yeasts and bacteria that survived on the wheat in the field and through milling. When you mix flour with water and let it sit, those microbes wake up, begin feeding on the starches that enzymes have broken into simple sugars, and multiply. A starter is really a way of giving that mixed community a reliable home: a steady supply of food, a comfortable warmth, and regular refreshment so desirable species outgrow the rest.

What the gas is doing inside the dough

Each yeast cell eats a sugar molecule and, through fermentation, splits it into roughly two molecules of ethanol and two of carbon dioxide. In bread baking the ethanol mostly evaporates in the oven, while the carbon dioxide is what physically lifts the loaf. Lactic acid bacteria run a similar fermentation that yields lactic acid (and some acetic acid) instead of ethanol, so they contribute to flavor and to the acidity that protects the dough from spoilage organisms without contributing much additional lift. The two communities work in parallel rather than one after the other.

Why the bubbles stay put

Gluten is the reason a bubble of gas does not simply zip upward and pop. Two proteins in wheat flour, glutenin and gliadin, link together when they are hydrated and agitated, building long, springy strands. As fermentation gets underway, those strands wrap around each gas pocket and stretch to accommodate it, which is why a well-developed dough can expand several times over before baking. If gluten is weak (low-protein flour, over-fermented dough, or insufficient mixing) the network tears and the gas escapes, producing a dense crumb.

What scoring actually controls

The score on top of a loaf is not decoration; it is a pressure relief valve. During oven spring, the gases in the dough expand rapidly and the crust sets within minutes. Wherever the surface has been cut, the dough can separate in a predictable direction and the interior opens up into an ear rather than tearing randomly along the side or bottom.
