Steam plays a critical role during this window: keeping the crust soft and flexible allows maximum spring and produces a glossy, crispy crust through surface starch gelatinization. Home bakers can introduce steam by spraying water into the oven, adding ice cubes to a hot pan, or using the Dutch oven method. Baking in a preheated Dutch oven with the lid on traps the dough's own steam for the first 20–30 minutes, mimicking a professional steam-injected oven, then removing the lid for browning.
Several tools help bakers work with precision. Baker's percentage expresses every ingredient's weight as a percentage of total flour weight (flour is always 100%), making recipe scaling and comparison simple. Hydration—the ratio of water to flour by weight—ranges from about 55–65% for firm, easy-to-handle doughs to 70–85% for open-crumb breads like ciabatta and focaccia. A poolish is a pre-ferment of equal weights flour and water with a small amount of yeast, fermented 8–16 hours before being added to the final dough; it develops complex flavors, improves texture, and extends shelf life. A sourdough starter is a similar pre-ferment but relies on wild yeast and lactobacillus bacteria captured from the environment rather than commercial yeast; it takes 7–14 days to establish and requires regular feedings.
Bread is fully baked when its internal temperature reaches 190–210°F—lean breads at the higher end, enriched breads with butter, eggs, or sugar at the lower end. Finally, the choice between a Dutch oven and a loaf pan shapes the final result: a Dutch oven traps steam for an artisan-style crispy crust and open crumb, while a loaf pan constrains the dough into a uniform, soft sandwich bread.
