Cakes, Cookies, and Chocolate

Cakes fall into two broad families. Sponge cakes are leavened primarily by whipped eggs with little or no added fat, producing light, airy textures—examples include génoise, angel food, and chiffon. Butter cakes are leavened by the creaming of butter and sugar along with chemical leaveners, producing richer and denser results—examples include yellow cake and pound cake. A génoise is a European sponge made by whipping whole eggs and sugar over a bain-marie until the mixture triples in volume, then folding in flour and sometimes melted butter; it is drier than American sponge cake and is often soaked with syrup. A chiffon cake combines sponge lightness with the moistness of oil, using whipped egg whites folded into a batter of yolks, oil, and dry ingredients, then baked in an ungreased tube pan. Angel food cake is the lightest of all, made from whipped egg whites (no yolks), sugar, cake flour, and cream of tartar, baked in an ungreased tube pan and inverted to cool so it does not collapse. A traditional pound cake uses a 1:1:1:1 ratio of butter, sugar, flour, and eggs—a pound of each—and is dense, rich, and moist with a tight crumb.

Mixing methods shape cake texture. The muffin method—mixing dry and wet ingredients separately, then combining with minimal stirring—is also used for quick breads and pancakes; over-mixing develops gluten and creates tunnels in muffins. The reverse creaming, or two-stage method, mixes flour and butter first, then adds liquid and eggs; the fat coats the flour particles, minimizing gluten development and producing a velvety, tender crumb with a flat top—ideal for layered cakes.

Cookie texture depends on a careful balance of ingredients. Chewy cookies typically use more brown sugar (which is hygroscopic from its molasses content and slightly acidic, activating baking soda), more egg yolk, bread flour for higher protein, and slightly underbaking. Crispy cookies use more white sugar, more butter, all-purpose or cake flour, thinner shaping, and longer baking. Brown sugar adds moisture and depth while white sugar promotes spreading and crisping with cleaner sweetness—most recipes use a combination for balance. Chilling cookie dough solidifies the butter to reduce spread, hydrates the flour for better texture, and develops flavor through enzymatic activity; even 30 minutes helps, but 24 to 72 hours develops the best flavor. Cookie spread depends on butter temperature (warmer equals more spread), sugar type, flour protein content, leavener type, and starting dough temperature—adjusting these variables gives bakers control over thickness.

Chocolate demands respect. Common baking types include unsweetened (100% cacao, pure chocolate liquor), bittersweet and dark (60–85% cacao with sugar), semisweet (50–60%), milk (30–45% with milk solids), white (cocoa butter, sugar, and milk with no cocoa solids), and cocoa powder (defatted, either natural or Dutch-processed). Natural cocoa is acidic (pH 5–6) with a lighter color and fruity flavor, and it reacts with baking soda; Dutch-process cocoa is alkalized (pH 7–8), darker, milder, and used with baking powder—the two are not interchangeable without adjusting leavening. Tempering chocolate—heating, cooling, and reheating it to specific temperatures (for dark chocolate: melt to 115–120°F, cool to 82°F, then reheat to 88–90°F)—forms stable cocoa butter crystals that give a glossy sheen, satisfying snap, and smooth texture, and prevent bloom (white or gray streaks from cocoa butter rising to the surface due to temperature fluctuation, or moisture dissolving surface sugar that then recrystallizes). Bloom is not harmful but signals that the chocolate has lost its temper.
